What's for dinner tonight?

So, I think I have stated {several times} just how much I really don't like to cook but I do cook once in a while and every now and again come across a recipe that I really like and want to share. For Lent Terry usually gives up  {this year was no different} so for the 40 days of Lent I have to come up with a fish or vegetarian option for dinner.  I was looking through some cook books today and I came across this very yummy salad and bonus for me - it is a Weight Watchers recipe.

Tex-Mex Bean Salad with Creamy Salsa Dressing
1/3 cup salsa
3 tablespoons light sour cream
1 tablespoon apple-cider vinegar
2 {15-ounce} cans black beans. rinsed and drained
1 cup grape tomatoes, halved
3/4 cup fresh or hawed frozen corn kernels
1/2avocado, peeled and diced
4 scallions, thinly sliced
1/2 cup chopped fresh cilantro
6 cups shredded Romain lettuce
24 baked low-fat tortilla chips
1/2 cup cubed pepper jack cheese

To make the dressing, combine the salsa, sour cream, and vinegar in a large bowl. Add the beans, tomatoes, corn,  avocado, scallions, and cilantro and toss well to coat.

Divide the lettuce among 6 serving plates. Top evenly with the bean mixture; surround with the chips and sprinkle with cheese

per serving {1 1/2 cups lettuce, 1 1/2 cups bean mixture, 6 tortilla chips, 2 tablespoons cheese}  330 cal, 11g Fat, 13g Fiber . Points value 7

for those of you who do Weight Watchers, I know 7 is a height point value for one meal but this is a large amount of food and although there is no meat it is quite filling and yummy too.
